Lamb meat is great...when cooked properly.
In our family, our distinct heritage requires great tasting lamb at the dinner table, so we’ve grown up only knowing the best methods for cooking it. But from our experience, most Americans are generally unsure about how to prepare lamb meat.
People also tend to get thrown off by the “premium pricing” when it comes to finding lamb meat at the market.
“I like it, but I never eat it.”
There is no reason to be intimidated by lamb meat. Our people have been eating it for years.
Our methods for cooking lamb were passed down through the generations of sheepherders and farmers who traversed the American West with their flocks. Those folks, in turn, learned from recipes generated in our ancestral homelands—the Basque Country and Italy.

A Reflection On The Four Seasons Of Sheep Ranching

The Lessons of Mr. Wooly
If ever there was a time I would have my own food truck, it would be called Mr. Wooly’s Lamb Shop and it would feature the best lamb burger in the country. The Shop would not just serve the best lamb burgers, but there would also be a special dish called “sloppy woolies” which would […]
The “Science” of the Lambs
With Halloween upon us, we thought we might touch on the famous psychological horror film, the “Silence of the Lambs”. It is fitting that the movie centers around a “meat eater” (cough, cough) named Hannibal Lecter. In one famous scene, this “carnivore” even orders a dinner of extra rare lamb chops. Maybe the doctor isn’t […]
The Most Underrated Tailgate Food
A few weeks ago, I had the chance to experience my very first football game at the iconic Notre Dame Stadium in South Bend, Indiana. While it didn’t quite match the excitement I felt as a young kid passionately supporting the team three and a half decades ago, it was still a memorable event. Over […]
